We also have a big salad for dinner every week or two. My husband originally thought a salad wouldn't fill him up, but he's changed his mind. I will use romaine, tuna, olives, tomatoes and chickpeas. It's delicious.

We love tacos! We make fish tacos all the time. I just get tilapia dip it in egg whites then a flour/panko/seasoning and fry in grapeseed oil. We top with avacado, cilantro, tomatoes, and cheese
I also made chicken tacos, they take about 30 seconds to throw in the crockpot.

I also make up a ton of meatballs at once then freeze them. We will have those with a salad, or substitute spaghetti squash for spaghetti. ( I prefer spaghetti, but DH tries to do the paleo thing)

I just made this in the crock pot last nights. Creamy Santa Fe Chicken:
- 1 brick Neufchatel cream cheese (low fat cream cheese)
- frozen chicken breasts (or fresh - I use frozen, it's easier)
- 1 can black beans
- 1 can corn
- 1 can Rotel
- 1/2 diced onion
- minced garlic (to taste - 1 tsp? I don't measure)
- salt & pepper to taste
- some red pepper flakes (dash)
Cook on low all day, stir and break up the chicken. Serve over brown rice. Super good and fairly healthy!

We like to make tortilla wrap pizzas. We use a whole wheat tortilla(or any wrap of your choice) and load it with your favorite healthy toppings, and bake it at about 325 until bottom of wrap is golden brown. They make great personal pizza's!

Ditto pretty much anything on Skinny Taste. I've only made one thing from there that I didn't love.
I do a lot with beans. I always have lentils (dry), black beans (dry and canned), chickpeas (dry and canned), white beans (mostly canned, some dry) and red beans (dry). I buy dry beans so I can control the sodium, plus you can make a whole pot for a dollar or two, but in a pinch use cans.
I make lentil stew or soup with sausage (or without), lentil patties, lentil mash in pita pockets, in pasta, lentil and quinoa chili, as taco "meat", curried....bonus, E LOVES lentils.
Chickpeas mashed with garlic and thinned out with a little bit of stock makes a great pasta sauce. I also make chickpea curry and chana masala.
One of E's favorite lunches is a can of white beans mashed with a can of drained tuna (with garlic) and a touch of lemon juice.
Black beans and red beans I usually make with rice, but I also add in black beans for extra protein whenever I can. Black bean and spinach enchiladas. Rice and corn cakes with a black bean salsa. Black bean soup.
D doesn't like ricotta, so I make a lasagna with mashed sweet potatoes or butternut squash, spinach and caramelized onions. Or spinach and black bean enchiladas with a mashed sweet potato, butternut squash or pumpkin sauce. I've made hashes with cooked quinoa, spinach and diced roasted sweet potato with a runny egg on top for both breakfast and dinner. Runny eggs are also pretty good on just quinoa. Also, sweet potato and black bean burritos and sweet potato, black bean and quinoa chili.
Hmm....I've started using pearl barley a bit. Recently I made a mushroom and pearl barley risotto that was a big hit. Takes a bit of time and some attention but is easy to make.
I'm not completely sure on how it'll come together but for dinner tonight I'm mulling on a spicy-ish stew with chickpeas, diced sweet potato, tomatoes, and quinoa or barley. Great source of protein and much easier on the wallet than meat. I rarely follow them, but if you'd like I can try to flesh out some recipes...or at least a decent base
