Does anyone have a great recipe for bean and rice burritos that can be frozen? I love Amy's frozen burritos, but they're pricey, and I could make them at home really easily, I'm sure!

Did you see @Mrs. Sketchbook's post yesterday about cutting grocery costs? She mentioned making her own burritos & freezing.

@tinyperson i'm not sure if she gave an exact recipe but it stood out to me because i thought "hey, there's an easy lunch i could prep ahead of time!"

I did this once without a recipe. Just made the same stuff I would have on "burrito night" at home and then did a mass assembly of burritos and froze.
So I had a bunch of tortillas, DH had some ground turkey, I like black beans (I'll season with a little olive oil, s&p, and cumin), DH likes refried beans, etc. Add corn or other veggies if you like, cheese, etc.
I think I double wrapped them (in foil, saran wrap or both) and put in a big ziplock baggie in the freezer.
