I'm trying to free up some much needed oven space on Thanksgiving and found a few recipes for stuffing in the slow cooker (I stuff the bird, so this would be the overflow that normally goes in a tray alongside my roasting pan and turkey). Has anyone every done this? I almost never use my slow cooker so I'm nervous about trying it this way.

I haven't, but I've made stuffing a day ahead several times and it's always been just as good on thanksgiving!

@Madison43: DH did last year and it was a big hit. Very moist, came out better than the stuffing from the oven.

He's been looking for the one he used last year, but I don't remember which one. It had sausage in it. I'll update if I find the recipe.
