I'm looking for ideas for healthy dinners that take less than 30 minutes. I'm working on my monthly meal plan and I want to mix it up a bit. We try to do low-fat with fresh ingredients.

We grilled a marinated flank steak (super quick to grill) and had steamed broccoli on the side tonight.
I also like Skinnytastes Crockpot Italian Sloppy Joes over brown rice.

I did a stuffed pepper tonight with tomatoes, quinoa, spinach, mozzarella, and Parmesan. They assembled fast and baked for 45 min

@petunia354: sloppy joes are a good idea in the crockpot!

Brown rice with teriyaki salmon (in the cast iron skillet ) and any fresh veggie - asparagus is our favorite!

Breakfast for dinner is always fast. We like waffles or pancakes with fruit and turkey bacon. Or an omelette with lots of veggies.

This isn't anything creative but we make a bunch of chicken early in the week and make big salads with chicken a few nights- you can add variety, Italian salad, Mexican salad, etc. It takes me over an hour to leave work, pick up the baby and drive home so I'm happy for something simple and tasty.

Oh man, there are tons of things you can make in 30 minutes, especially if you do some of the prep work ahead of time.
Protein + salad (be creative: spinach, arugula, baby greens, avocado, nuts, fruit, goat cheese, etc.)
Marinade chicken in a ziplock overnight (can freeze in the marinade and let thaw in the fridge while you're at work): bbq, teriyaki, etc. make kabobs with marinated chicken, sweet peppers and onions.
Sides of grilled veggies, caprese salad.
Quinoa takes less than 15 minutes to cook - lemon or pesto quinoa is great as a side or make big batches of quinoa salads with beans, veggies, etc (southwestern and greek are two of our favorites).
Make a batch of pesto pasta ahead of time and have that cold with some grilled meat or fish
Fish tacos, carne asada tacos can be pulled together in less than 30 minutes. Crockpot of pulled chicken or pork: make sandwiches one night and carnitas-like tacos the next.

Avocado and black bean enchiladas. Only a bit of cheese on top, super tasty. I serve them with rice or farro.

Stuffed pepper skillet. Sauté onion and ground meat, drain fat, and add a jar of spaghetti sauce and chopped bell pepper and cooked rice (great use of leftover brown rice) and whatever herbs, spices, salt and pepper you like until rice is warmed through and the bell pepper is cooked. Much faster than stuffed peppers and one skillet.

BBQ everything!
Dice potatoes, put in foil with olive oil, salt and pepper, bbq. Same with sweet potatoes.
Slice zucchini, sprinkle on seasoning salt, add shredded cheddar cheese, bbq. Same with slices of tomato and mozzarella! (Works best on a cookie sheet on the bbq...)
Skewers! Pepper, zucchini, mushroom, onion, pineapple. Some time consuming prep work chopping veggies. Bbq!
Broccoli salad - broccoli + mayo + vinegar + mozzarella cheese + dried cranberries. I usually make enough for two days.
Sometimes we also have "appetizers" to hold us until dinner is ready. We favour peppers and hummus, and bread (ciabatta or focaccia) and olive oil and balsamic vinegar.

-lettuce wrap tacos with ground turkey
-chicken, onion and bell pepper either alone or with a whole wheat tortilla
-grilled chicken on salad
-brats (the kind you buy raw - high in fat but still good protein) I eat them without the bun
-ground turkey and black bean chili
-zucchini noodles
-whole wheat pizza dough from Trader Joe's loaded with grilled veggies

- lettuce wraps
- tacos (chicken, beef, pork, steak) you can make a salad instead to skip the carbs of the shell.
- stuffed peppers (lean beef/turkey, brown rice, tomatoes, peppers, onion, cheese on top)
- marinated chicken (Italian dressing) and bake or grill with some veggies
- pulled chicken/pork in crockpot (we do this once a week) and then you can do whatever you want with it: sandwiches, top on salads, throw in a tortilla for a wrap
- zucchini pasta topped with veggies and EVOO
- zucchini pizza boats (kid favorite at my house) use a zucchini as crust insead of pizza crust and top like normal.
- WW pasta tossed with EVOO, red pepper flakes, garlic, chicken, tomatoes, spinach, onion.
- rotisserie chicken (crockpot or store bought) and roasted veggies
My best advice is to cut the veggies up the night before it saves a ton of time and then just toss in EVOO and spices and roast for 20 minutes. The crockpot is my best friend for quick dinners. I use it at least 2-3 times a week so I can enjoy my nights with my girls and DH.

This is one of my top 5 favorite meals, I've probably made it 75 times! And this is a pasta dish that actually tastes better with whole wheat spaghetti.
