A coworker brought these in to work one day and they were awesome. She actually cut them into cookies rather than bars. Fair warning: she and her husband call them "poop cookies" because they really get things moving, ifyaknowwhatimean.... Sorry, I don't have a link, she just wrote the recipe for me and I added it to my Pepperplate box.
INGREDIENTSSubmit
2 cups rolled oats
3/4 cup date or coconut sugar
1/2 cup milled flax seed
3/4 tsp cinnamon
1 cup oat flour
3/4 cup dried fruit
1/2 cup honey or agave nectar
1 egg
1/2 cup coconut oil
2 tsp vanilla extract
INSTRUCTIONSSubmit
Preheat oven to 350. Grease a 9x13 pan
In a large bowl, mix together the oats, sugar, flax seed, cinnamon, flour, and dried fruit. Make a well in the center and pour in the honey, egg, oil, and vanilla. Mix well. Pat mixture into the pan.
Bake for 30-35 minutes until bars turn golden at the edges. Cool for 5 minutes, then cut into bars while still warm. Do not allow to cool completely or the bars will be too hard to cut.
