Anyone make their own spice mixes or rubs? I'm asking as a gift for my father-in-law. He loves cooking over an open fire (camping) or on his grill at home. He LOVES barbeque and often attends grill-offs. It's just his thing.

When I'm making a dry rub for ribs, I just gather a ton of ingredients and add them to taste. Smoked or regular paprika for a base (as in, dump one or two whole jars in there), garlic powder, dark brown sugar, salt, pepper, whatever your heart desires! I find the smoky paprika and dark brown sugar (which basically has more molasses) are a pretty great combo.
And it sounds weird, but taste as you go! You'll find you can get the right balance of salt to sweet that way.

I pinned a bunch to make because we are gluten free. It is super easy and fun. Last year I gifted my BIL rubs for pork at Christmas.
