I'm really interested in the Uppababy Mesa and the color that I love is "wheat" (basically beige). My mom said it's a bad idea since car seats get filthy and the color will show the dirt.
I get that the stroller will get dirty (we chose red for that reason), but do infant car seats get dirty too? Should I go with a darker color to hide the dirt?

Yes it gets dirty, but they wash well!
We got a Graco Snugride at the last minute in platinum (basically tan-ish. Matched well with the tan/black city mini). DS vomited a lot so there was tons of breastmilk vomit all over that thing. Washed up so nicely that you can't even tell it was there! I love the tan/beige colors too.

DD's infant carseat looks brand new! I'm surprised with how good it's stood up and we never even had to wash it. But then again, we don't really go out much.

My lo threw up his very first time in the car seat. We weren't even outside! I think darker would be better, but I also just expect baby stuff to get gross.

We have a beige one which masks the ungodly amount of spit up all over it. Luckily it washes well.

Usually car seat and strollers are made out of great fabric that wipes off. We have a silver stroller and love it!

Ours was light gray and did show some dirt, not too bad though! It had vomit, pee, poop... god you name it. They do get dirty, but as anbanan said, they wash well.

@char54: Mine looks brand new - he's spit up on the pads once but I washed them. We used it once a week months 1 & 2 and almost every day for the past 6 weeks or so.

Our infant seat didn't get dirty at all.
I did wash it once before baby 2 arrived though.
So far I've only washed our convertible cover once. DD eats and drinks in the car but its stayed surprisingly clean.
Neither of our seats are dark.

Our infant car seat stayed pretty clean but the convertible is getting pretty bad since lo is constantly eating snacks in there. We have a black one but it still looks dirty.

Mine never did get overly dirty.. My girl isn't really a leaker or a spitter-upper. She's still in it at 18 months, and she does eat in it quite often. I just make sure to feed her stuff that doesn't stick or stain.
