I cook ground beef with black or refried pinto beans, add some salt, cumin and sriracha.
I top my taco with the beef mixture, rice, avocado, tomatoes, lettuce, sour cream and cheese.

dump black beans, taco seasoning, tomato sauce, and jalapenos in a crockpot. top it with a cheap cut of beef and leave on low for 6 hours. shred and mix it together, then scoop into a soft corn tortilla. top it with some guacamole, salsa, chopped onions and cilantro.

Usually chicken!
I put chicken in a crockpot with 2c water, 5 boillion cubes & some garlic and cook it on high for 4 hours. I shred it, and drain the juice. Sometimes we mix 1/2 cup of the juice with 1/2 cup hot sauce, but not always.
We usually make burritos, not tacos.
Ours get homemade guacamole, lettuce, shredded cheese, olives And mine gets jalenpenos!

I buy the ground turkey that is already seasoned with taco seasoning and cook that. Then I put out tomato, onion, salsa, and avocado for toppings. No sour cream, DH hates it. And always crunchy taco shells!

We almost always make steak tacos. I do a lime/cilantro marinade, then DH bbq's. We put avocado, green salsa, Mexican cheese, cotija cheese, shredded lettuce and sour cream in them. We grill the tortillas too!

I cook ground turkey with black beans, cayenne pepper, cumin, and chili powder. I make my tacos with that filling plus cheese, tomatoes, cilantro, avocado, and a squeeze of lime juice. Sometimes we cut leftover steak into strips and make tacos with that too.

We love making roasted sweet potato and black bean tacos. We top them with shredded cabbage, salsa and sour cream. Yum!

We never make/have Americanized ground beef tacos; DH never had them growing up (his mom is Mexican) and we just don't eat them now.
We eat a lot of............
carne asada tacos (steak, tomatillo salsa, onions, cilantro)
fish tacos (white fish, onions, cilantro and avocado)
Pork carnitas tacos (pork, onions, spicy cabbage slaw)
Wilted greens/chicken tacos (chicken, spinach/kale/leafy green, sour cream)
Shrimp tacos (spicy shrimp, salsa, spicy cabbage slaw)
Chicken mole tacos

@yoursilverlining: hmm i need to google for a spicy cabbage slaw that goes on tacos! we keep getting cabbage in our CSA!
I usually do ground meat + taco seasoning + black or kidney beans + a grain (quinoa/amaranth/rice) and then toppings of tomatoes + raw onion + cheese + black olives. Lately I've been adding in chard/kale/spinach because we get a ton each week.

We usually do fish tacos. Usually we cube salmon/haddock/whitefish, egg wash then a panko/bread crumb mixture. We like using thick pita, then lettuce, tomatoes, cilantro, a asian slaw and ceaser dressing! It's so good. And some baked sweet potato fries also thrown into the taco!

Pretty boring here. I don't like beans and DH doesn't like onions, so usually just ground turkey w/ the taco seasoning. Then lettuce, tomatoes, cheese and sour cream (add on salsa for DH) on top.
I just made a "taco pasta" the other night. SOO good!

I love tacos in the crock pot: add frozen chicken breast, black beans, sometimes peppers, and salsa in the crock pot for 4 hours. Add corn, cook for half an hour and serve on corn tortillas. I also love tacos made from shredded beef that's marinated and cooked in the crock pot.
We usually serve ours with cheese, sour cream, and guacamole. Yum
ETA: also love them in lettuce cups!

@scg00387: Ours is very easy - just mix yours up to taste, depending on what you like. Shredded cabbage, shredded carrot (I do about half a head of green cabbage to 1 carrot), red onion, jalapeno or serrano peppers, juice of about 1/2 a lime, bit of olive oil just to mix everything together, S&P. Very fresh and crunchy.
@oliviaoblivia: They are very easy and sooooooooo good. Just slice up raw chicken, add to about 2 cups of tomatillo salsa (we make ours, but you can buy pretty good jarred sauce as well), simmer for about 10 minutes, until cooked or just about cooked. Add in about 3-4 cups of green, wilt them down for about 10 minutes. Add mixture to warm tortillas, top with sour cream.

Never with taco shells, always with corn tortillas (freshly made if possible).
I like them with carne asada or carnitas, freshly made pico de gallo and sprinkled with cilatro, raw onion and queso fresco.
Sometimes I will make baleadas, which are like Honduran tacos. Flour tortillas filled with refried black beans, cheese, and an egg.
I also like to make pupusas (filled corn tortillas) with beans, pork and cheese. I put cabbage slaw on top

We do a variety of fancier kinds, but our basic is just ground turkey or beef with taco seasoning (I like the Trader Joe's kind). Top with grated cheese, avacado or quick guacamole that I throw together, sour cream, lettuce, chopped tomatoes, and taco sauce. Yum.

We don't really eat tacos though I wish we did. And the only way hubs likes it seems to be just plain ground beef, shreded lettuce, tomatoes, cheese. Anything extra - beans or rice or whatnot - are just not for him. He's just not into Mexican.
I, on the other hand, looooooooooooove Mexican food and haven't had it in forever. Now I want tacos...

i mix 1.5lbs ground turkey with 1lb of ground beef, sometimes i use the seasoning mix, other times i make my own. then we do pretty typical toppings- usually lettuce, tomatoes, cheese. mmmmmmmm

There's a lot of good stuff in this thread! The slow cooker pork cooked in orange and lime juices LindseyKay posted would probably work really well, too!
@yoursilverlining: other than the fish tacos, do you do anything in the crockpot? I am dying to make carne asada, but I don't really know where to begin...what cut of meat is best?

the gravy was thin, so i could've done with less liquid. And i used 2 3lb boneless breasts
