I recently met someone someone named Shalyn, pronounced 'Shay-Lin,' and I really love her name, and would consider it if I ever had a girl. I feel like people might pronounce her spelling as 'Shah - lin,' however. How would you spell it?

I think all of your choices except for Shailyn have the obvious pronunciation (to me) of "shay-lyn". I don't know if I have a preference of one over another. If you think you might/she might want to go by just "Shay" or "Shae" as a nickname and you prefer one over the other, I would let that influence my choice.
