You'll get more information on this as the series progresses, but in the case of True Blood vampires, they see themselves as a completely different species of creature, above humans. So they don't discriminate between various races/groups of humans. They are all below them, no matter what.

Additionally, I assume they've seen centuries of racism ebb and flow with different groups of people being the focus of prejudice, so they probably just don't care overall. They know that one group might be the focus now, but 50 years ago it was a different group and 50 years later it's going to be another one. It seems like it wouldn't bother them that much since 50 years (or whatever arbitrary time you want to assign) is a really short period of time to vamps, who have been around for thousands of years. It is a blink of an eye to them, and unworthy of worrying about.

Finally, ultimately the big topic on True Blood is the assimilation of vampires into mainstream culture. Since it is really politically incorrect to be racist/homophobic these days, it makes sense that they would do their best to be open-minded and accepting during this period of assimilation into the culture.

I'm sure there are probably a mixture of both (racists and non-racists)! But, I still stand by the fact that they are probably just racist as a whole against humans entirely. Think of it like how you wouldn't be racist against a dog just because he had black fur, that makes no sense. I assume vampires look at us like dogs (or cows - since they eat us).
