Digital photography. I took a few photography courses, but they were using film, which I love & find developing to be really fun, but it's just not something that I'll do on my own time, so digital photo editing is something I know nothing about but would really want to learn. Actually, that's lie- I want to know about it already, but I don't think I'd enjoy the class itself. I would love to take some cooking classes & I'd enjoy the class & having the skills from it but I'm not a bad cook, so the digital photography class would be more useful.

I'd love to learn to speak Greek. My dad's family is Greek but he was a slacker in Greek school so he never learned it well enough to teach us. But most of my aunts, uncles and cousins can speak it. I wish I had learned it by now so I could teach my children!

Clinical pathology. I work in health research, and I know it can drive the clinical people nuts when the project administrators and statisticians have zero concept of diagnostic procedures- I would love to ask fewer dumb questions

I've taken lots of classes through our county parks department and I love them. You all should check yours because they usually offer all of the types of classes listed above! Right now I'd like to take prenatal yoga or pilates because I can't find anyplace that is offering them right now!

@Alivoo01: I took a cake decorating class at Michael's. It was by Wilton but it was fun. The supplies get expensive, but the class was only $35. It was just 4 nights once a week.
