Just add some salsa, cup or two, over the chicken breaststroke and turn on the crock pot. The finished product will shred easily for burritos/tacos, or anything else.

Check out the Slowcooker Revolution cookbook from America's Test Kitchen. Most of their chicken recipes use thighs, not the breast, as the white meat doesn't stand up well to long cooking times.

We do chicken quesadillas. Throw in taco seasoning, shred, then throw them on quesadillas with cheese. f I have time, i add grilled peppers and onions, too. Dh really likes the taco bell copycat quesadilla sauce that I make to go with it

I usually make chicken tacos: 2 chicken breasts, 1 can of drained and rinsed black beans, 1 jar of salsa or 1 can of Rotel. I also sometimes add taco seasoning.

@ellewoods84: I throw it all in to the crockpot in the AM and then put it on low all day. Probably 8 hours? It's okay if you do it for longer though. If you don't have that much time, you can throw it on high and do it for 4 hours. Search for crockpot recipes on Pinterest... That's what I do

I've been cooking chicken in the crockpot a lot lately!
Last week we did a sweet & spicy pulled chicken packet (had the seasonings + ketchup and brown sugar).

I just start it before I go to work for 8 hours on low and let it warm till we're ready to eat.

Any of the above ( I do salsa, and then mix in cream cheese at the end, throw in a tortilla for an easy enchilada)
I'll also do a package of Italian dressing (powder mix), cream of chicken soup reduced sodium (2), and some chicken broth, and serve this over noodles for an Italian chicken.

Along the lines of tacos, burritos, burrito bowls, etc this is so so good and so easy! I only use 16 oz salsa and it's still perfect.

Similar to other suggestions. I put chicken, a can of black beans, and a jar of salsa in the crockpot on low for 6-8 hours. Then serve with tortilla chips and other favorite nacho toppings.

@ellewoods84: the salsa chicken is delicious and it also doesnt have to cook that long (in crockpot terms!). I usually do the lowest amount of time setting possible. Its also a great base for tortilla soup!

Chicken N Dumplings (need: 2 cans cream chicken soup, 2 C milk, package frzn veggies, package ranch seasoning and pilsbury grands biscuits)

1 pound of chicken with 1 cup of salsa (the little 8oz cans of Herdez salsa in the Mexican section are perfect - the salsa verde is a fave!) and 1/2 packet of McCormick CHICKEN taco seasoning (I don't know why but it makes a huge difference). I let it go for 4-6 hours on low and shred for perfect Mexican chicken for tacos, soup, enchiladas, etc.
Otherwise, I'd do a layered Thanksgiving style meal. I layer 3-4 chicken breasts on the bottom of the crockpot, sprinkle with S+P and poultry seasoning, cover with a box of prepared stuffing mix (with the veggies and all that), and then 1-2 bags frozen veggies (our favorite is corn and green beans). We let it go for 4-6 hours on low, but don't peak until at least 4 hours have elapsed to lock in the steam for the stuffing. Then just poke around the bottom to see if the chicken is done. Then just scoop, cover with gravy and cranberry sauce and a grab a tub of mashed potatoes if you want. We do this meal all year long with turkey parts, chicken, etc. Its so easy and a total comfort homerun!

1 lb chicken + 1/2 packet Ranch dressing mix + 1/2-1 bottle of Frank's Red Hot in the crockpot on low 6-8 hrs = yummy buffalo chicken. I like it as tacos or a sandwich. Sometimes I'll make buffalo chicken nachos too.

Chicken tacos are so easy. 2 chicken breast, 16 oz of salsa and 1/2 a packet of taco seasoning.

I made easy chicken and dumplings today with mine. Chicken breasts, one can of cream of chicken soup, one can of cream of celery soup and one onion chopped up. About 30 minutes to an hour before eating, shred the chicken and then unroll a can of crescent rolls and lay it on top to bake. Both boys and my husband love this.
I've also make chicken for tacos in the crock pot.
