A tee time at a golf course he's always thought he couldn't afford it go to? An expensive driver or something? My husband is a golfer as well.

Luxury suites or something at a baseball game?

Maybe tickets to a ballgame, or a date at a golf course? For my husband's birthday, we both took the day off work and I found a concert we could go to in the daytime, then we went to a museum he really wanted to check out. We'll have two kids soon, so I really wanted to give him a day spent doing things you can't do with a new baby

For my now-husband's 35th birthday, I orchestrated a surprise dinner party. The catch was that, since he loves to cook, I planned a complicated menu, ordered groceries, and informed him the night before that he would have to spend the next day cooking for a large number (I think it was 18?) of mystery guests. I really lucked out and was able to get a lot of his friends to come visit from far distances including Boston and Vermont, and even his friends who live in Paris were coincidentally visiting family in NYC that weekend and were able to attend. We hosted it at his mom's house since my apartment was too small. So we got up early on a Saturday to drive there, spent the day cooking, and throughout the day random friends of his trickled over to hang out.

Speaking more generally, I prefer experience-based gifts.

They make cuff links out of sports paraphernalia-- like I think dh has a pair made from seats at Shea stadium

Experience type gifts. For DH this year I got him tickets to the Rock Hall induction ceremony. He got to see Paul McCartney and Ringo perform together - definitely not a gift he'll forget!

If you're crafty and have the budget for it, how about rounding up enough whiskey miniatures for an advent calendar? It would count down between his birthday and your baby's arrival.

@simplyfelicity: I think that Makers Mark will do personalized bottles of bourbon that are pretty cool (I'm just thinking back, an acquaintance did this for her husband on their wedding day). If he's interested in the history, there are lots of books out there.

@simplyfelicity: It sounds like he liked to give you sentimental gifts? What about a bar set? I got my DH a fancy whiskey decanter for graduation. A set of nice glasses. And fancy ice cube molds are all the rage now, too. And if you can find a bottle of Pappy VonWinkle or whatever it is, you would really be set!

@simplyfelicity: My husband is a hug whiskey lover, so one birthday I got him a monogrammed flask, a good bottle of whiskey, and whiskey rocks (thank you Etsy!). He loves the whiskey rocks and uses them alot.

I really line experience gifts. Groupon is actually pretty good for this, I've gotten my husband a Nascar driving experience and a flight lesson where he got to actually take a plane up and fly for like an hour. In your case I would see if you could find a practice with a pro type thing or maybe a great cooking class.

I'd plan a super fun weekend getaway, where he gets to do activities he likes to do, then afterwards maybe what's in your title.
