I received one of these like 2 years ago and have never used it. I have never cooked with a dutch oven before. What do I use it for?

Following this! I have the same PC Dutch Oven and have also never used it!!

You can use it like a casserole dish.
We have a cast iron dutch oven that can go on the stove. Some recipes even call for it to go on the stove then into the oven.

I don't have one, but I bet that would be delicious for a baked mac n cheese!

We use ours like a casserole dish! Just like @Mrs.Someone said. Ours isn't PC, but probably similar. I mostly just bake in it, like mac & cheese or casserole or something similar. I've also made stuffing in it.

I like using them for braising....get it nice and hot on the stove, throw and brown your meat of choice, remove and set aside. Throw in some veggies--for me, usually onions and garlic, followed by carrots and celery, until they start to soften. Throw in other spices and a bit of flour (I do this when I want more of a gravy) and let it cook for a bit, then add liquid--for me usually wine or stock. Add meat back in, add more liquid if needed (the liquid should just cover the meat). Throw the lid on and toss it in the oven.
Here's a more detailed (probably better, lol) breakdown of braising: http://culinaryarts.about.com/od/moistheatcooking/ht/How-to-Braise-Meat.htm
ETA: I also do a lot of rice dishes in them--namely jambalaya and lentils and rice. I could make them on the stove, but I like just being able to get them started and then throw it in the oven and not have to stir/fiddle with/think about it.

You can also cook in the microwave in it. Google pampered chef deep covered baker microwave and you should find stuff

We make fajitas in the microwave in it. Chop up onions and peppers in the bottom then put skinless chicken tenders (like, raw chicken tenders) on top of that and cook on high for 13 minutes in the microwave. Then I just add fajita seasoning and it's done. Super easy.

I have a Le Creuset, but imagine Pampered Chef is about the same? My favorite thing to make is this chicken recipe. It is incredibly easy and very hands off. http://mariniere.wordpress.com/2012/11/13/poulet-a-la-cocotte-french-chicken-in-a-pot/
I also make a lot of applesauce, soups and tomato sauce in mine.

I know you can make bread in them. Also, soups and sauces.
You can use the pan to sear meat, too, since it can hold in the heat.
I bought my dutch oven a couple months and still haven't used it. I did buy a cookbook just on dutch oven meals. I heard they are really great for one pot meals, which is awesome for my anti-dishwashing self.

Like @Lamariniere, I have a Le Creuset and not a PC, but I'm assuming they are pretty much the same thing? It's one of my favorite pieces in the kitchen. Bolognese sauce, soups/stews, braises, frying, beef bourguignon, short ribs, etc, etc, etc. I heard you can even use it to bake bread (I haven't tried it personally though).
