Yay! Fun topic!
Our celebration will be April 19th and I'm basically making all of LO's fave foods. Suggestions for additions are welcome!
Guacamole
Hummus
(some kind of chips, pita, veggies, etc. to dip in both of the above).
Baked beans.
Mac n cheese
Fruit salad or fruit skewers
Cheese platter (cut into fun shapes hopefully)
Desserts:
Funfetti smash cake and cupcakes made with leftover batter.
Cake mix sugar cookies
Chocolate cake (most likely) for the adults
Anything I could add? I'm thinking I need some kind of carb/bread? Maybe mini muffins? It's going to be an early lunch.

@Smurfette: lol, yeah that's the problem when a vegetarian plans a party
I can't think of anything that would be super easy for me to make (DH the carnivore will be working). Plus LO hasn't had any meat yet.
GOLD / wonderful coconut / 33402 posts
@cmomma17: I would do a pulled pork. You can make the day before and then you just can thrown in the crock pot to warm up. Get some slider buns and done!

@mrsH, I used smurfette's recipe but red pepper jelly is like...1 cup of chopped peppers, 6 cups of sugar, and you make it like jam, so it's chunky. I made a strawberry-jalapeno one i'm going to put on top of her dip
like this!

@cmomma17: The broccoli salad is an old recipe of my mum's and she's going to bring it for the party. It's basically raw broccoli, cubed cheddar cheese, crumbled bacon and red onion in a mayo-based dressing. I'm sure if you google broccoli salad you'll find a lot of similar ones
I don't have an actual recipe for the quinoa salad either (sorry, I'm the worst!). It's a cup of quinoa (I'll probably double it for the party) cooked in chicken stock, then you add in diced cucumber and tomatoes, crumbled feta and chopped scallions. The dressing is the juice of one lemon mixed with about 1/3 c. of olive oil. Salt and pepper to taste.
wonderful grape / 20453 posts
@smurfette, it's way easier than you would think! I do it when DH takes E to his mom's. I can get a whole batch of 24 jars done in about 1.5 hours

@heartonastring: I want to come to your party please. Yum!
And I did google broccoli salad and now I'm really hungry!
