We have boneless pork chops I want to use but I'm tired of the usual grilled/pan fried/baked. I'm basically hoping to do something with them that doesn't really feel like pork chops. Maybe in the crockpot? Any ideas?

I've done one where you coat them in onion soup mix and they were soooooo good! I also like to pan-fry with apples for fall. Best I can do! If you're interested I can hunt down recipes (or you can google, of course).

You can toss the in the crockpot with an onion and some bbq sauce and do them as pulled pork. Or with an onion, garlic, oregano, red pepper flakes, and a can of tomatoes and have carnitas.

I like to make Schnitzel with boneless pork chops. Just pound them out thin first. This recipe is pretty close to our family recipe.

I made it this week, MSPI style though, and it was awesome! I doubled the mushrooms too, as we love mushrooms. Made great leftovers to take for lunch at work too.

I'd make a big Sunday gravy in the crockpot - just brown the chops and some Italian sausage links, add to the crock with tomato sauce and aromatics and let it just burble all day until the meat is falling apart and serve over spaghetti.
Here's a good template - just let the sausage cook less than the pork chops - they need like two hours at most. Adding meatballs or any other meat you have laying around is good too.

Carnitas tonight were a huge hit! So good! @mrschickpea: I used that recipe except I added a little taco sauce to the crockpot, and I didn't broil them.
