For his smash cake, which was a few days before his birthday, I made a quinoa cake, but he ended up having an allergic reaction to some of the corn based ingredients he was having in it for the first time. For his birthday party after I made him a carrot "cake"...pureed carrots piped into a cupcake wrapper. ETA: the quinoa cake was vegan and about 5 ingredients so not the sweetest thing in the world lol.
In a perfect world where we could have made whatever I probably would have done vanilla based and swapped out the sugar and butter for a fruit.

Chocolate with chocolate mousse filling, covered in fondant. He wasn't interested in the cake at all!

I'm pretty sure I'm making her a vanilla bean cake. For the guests they'll have regular yellow cake.

@regberadaisy: I loved the white on white ruffles! The icing was super sweet actually. We had little to work with and with the cake itself being sugar free I didn't feel as bad (it was 10x, water and palm oil as shortening. 10x has corn starch in it and the palm oil can be from coconut which he cannot have so there were two our problems...it did make for some nice pics though. Poor kid).

LO is allergic to dairy so my friend made a banana cake (I THINK it was banana) and used a soy-based buttercream icing. Unfortunately, LO HATES soy and only poked at her cake. No one else ate it (guests had dessert with their meal).

I made triple vanilla poundcake cupcakes with Italian miringue buttercream icing. She loved them so much that yesterday when I made muffins she loudly shouted, "cu-cake!" and wanted to eat them because they were in the same silicon liners.
Oh-- and was going to mention that my oldest has a dye sensitivity and I found some great natural colorants from India Tree that I used to color the frosting. The color is subtle, and not what you would get/expect from artificial dye, but it is so nice to know it's natural and my oldest can actually eat it.

We did a 2-tier cake for the party. The top tier was red velvet with cream cheese frosting and the bottom was vanilla with vanilla buttercream. His smash cake was vanilla.
I thought I wanted to do something less sweet for my sugar fiend of a baby but he ended up not loving cake anyway! (Even though he goes nuts over any other baked good I make that has virtually no added sweetener)

I haven't decided yet. I wasn't so sure he'd be able to eat dairy, but it looks like we are in the clear! It will probably be vanilla cake with buttercream frosting.
