the crappy cooking wine you buy in the grocery store (not in the alcohol section), we don't drink it, so i don't really care if it's good or not.

@autumnlove: haha, yup! i told mr. bird if he goes low enough to drink those, he's getting shipped off to rehab it's really not even drinkable, but if you're cooking with it, i figure it's good enough

I use any leftovers. I don't drink it so we use gifted red wine as cooking wine. I keep the white for me!

Those grocery store wines are probably the worse things you can use in cooking, you should really use a drinking wine because as you cook it, you concentrate the flavors.
Ask someone who works at the liquor store, we get really great recs.

I usually don't have any leftovers and I don't want to make another trip to the liquor store so I omit from the recipe.

I try to use real wine, but the cheapest I can find. Two-buck (now three-buck!) chucks are great, or any other cheap cabernet sauvignon you can find. I would never spend over $8-10 on a cooking wine, but I do try to get a bona fide wine, and not the alcohol-free "cooking wines" at the grocery store.
