Hmmm... If it were me I would just eat them with a spoon. But to actually use them in a recipe...? Could you make some sort of casserole and mix the potatoes with some butter/cheese/sour cream and put on top when you bake it to make some sort of crust? That's pretty similar to mashed potatoes though

@grizz, too mashed potato-y for him, I think. He's just got this weird thing about pureed food. And if i want mashed potatoes, i want BAD mashed potatoes
I'm just not sure what to do with them all! There are so many! and they're already cooked, otherwise i would've shredded them

I found some fish cake recipes that look really good. i think i can bake them (a la a Skinnytaste potato pancake recipe)
I just don't eat a lot of potatoes in general so it's hard to think of what would be good (that isn't battered and deep fried). And i don't necessarily want to make mashed potatoes just to have a recipe on hand. Although now I think i could make a ground turkey shepherd's pie just for me to nom on all week for lunch

@blackbird: What are fish cakes???? Whaaaat?? You're missing out! Salmon fish cakes with a hollandaise sauce, with some gently wilted spinach, topped with parmesan shavings, black pepper and a teeny squeeze of lemon juice. Yum!

@cherrybee, well i made some salmon cakes with leftover salmon a couple week sago. But it was just salmon and a little egg+bread crumb. It was VERY salmon-y tasting but E liked them.
I found a fish cake recipe with potato, though, and cod, which i'm going to try Sunday! But if you have a better recipe, send it my way!

i would probably make a hash with it...fry up some ham/bacon/leftover pork, add onion and garlic, chunk up the potatoes (fine if they crumble) add some greens if you are so inclined and top with a fried egg.

My mom used to just throw leftover potatoes in a frying pan with some cheese and fry it up. So good!

I think all of my suggestions have been mentioned, but I'd vote for baked potato soup or fish cakes.
