What to do with leftover potato insides?

    @blackbird: I'd use them to make a dish with a little oil (maybe 1tbsp max) fry them in the pan and add a little bacon and diced onions. You can also add an egg (sunny side up). We call it a gröschtl...

    @kimberlybee, curry sounds fantastic, too! Except i have like, none of those ingredients, gah. It didn't even occur to me to think about an indian curry of some kind

    I made a frittata last week with leftover potatoes. It wasn't anything groundbreaking, but it was good and used up a ton of leftovers. I steamed the potatoes and had about 2 lbs. I added red onion, broccoli, spinach, parsley, spices, and used 5 whole eggs and 5 egg whites. I served them with sour cream and they turned out really well.
