Last week I made filling for enchilidas: 4 chicken breast, jar of salsa, block of cream cheese. When I got home I put it in tortillas, poured enchildas sauce and cheese on top, baked for 15 minutes. easy and delicious!

I made Chicken Tortilla Soup last night. Kept enough for two bowls for tonight and froze five bags for something easy when I go back to work in a couple weeks.
Before that it was a Pulled Pork and Creamy Chipotle Chicken.

Last week I threw in a few chicken breasts, chopped up carrots, frozen green beans and corn and added some sun-dried tomato dressing. No recipe that I followed, just hoped that it would come out okay and it did - it was so good!

I use my slow cooker weekly. Last week I made BBQ spare ribs. After 4-5 hours, the meat falls right off the bone. This weekends plan is carnitas. My husband loooooooves Chipotles burrito bowls so now we make our own. I have a recipe for their cilantro lime rice and my carnitas comes out even better than Chipotles does. One pork roast could feed us for a week if we didn’t get bored of it.

We made a chicken last week, but I don't remember which one. We're planning to make a minestrone later this week. We use it a lot in the winter, and even more between having just finished a kitchen renovation (so we had no stove/oven) and now trying to get some freezer meals stocked for baby's arrival!
