Paleo lasagna! Basically its just zucchini, meat sauce and spinach. We made it last week and froze half of it. I think we are going to "cheat" and sprinkle some mozzarella on the top tonight

A fabulous chick pea and sweet potato curry from a Michael Smith cookbook. I tried making it for the first time a couple of weeks ago, and it almost has DH convinced a meal without meat is A-OK. It is that good.

Leftover skinny-style alfredo with chicken, broccoli, and farfalle pasta. I'm very into the 'cook once, eat twice' thing lately

@regberadaisy: 1 white onion, diced
1 pound of extra lean turkey, or ground sirloin
1 15oz can diced tomatoes, low sodium
3 tbsp tomato paste
3 tbsp Italian spice blend
1 tsp salt
1/2 tsp pepper
2 cloves garlic, crushed
1 pound of zucchini and/or yellow squash, cut into medallion rounds
And spinach leaves
Basically, sautee onion and garlic in olive oil. Brown meat (add Italian sausage too if you like). Add spices, paste, and tomatoes and simmer for a bit. Layer sauce with zucchini and spinach leaves. Bake at 375 for about an hour. If you want you can add mozzarella on top or layer it in (this makes it not technically paleo though)
