@Springtime: Texas caviar. Relatively easy because it's mostly chopping up veggies and opening a can of beans. Can be served with pita bread or tortilla chips. Or I can eat the entire bowl all by myself
My other go to is hummus and veggies/pita

I made a hummus layer dip from pinterest last weekend that was yummy-- spread hummus on a plate or shallow baking dish and top with chopped cucumber, tomato, kalamata olives, feta. Drizzle with olive oil and squeeze some lemon. Serve with pita chips- delish!

If I really have absolutely no time, I go to costco for the Spinach artichoke dip and put it in a hawaiian bread bowl.

We usually take beef, eggs and rice to work parties. I'm sure there's a better name for it but that's what my mom always calls it!

@NorCalWayfarer: 1 package of cream cheese, 1 package of shredded cheese (I use sharp cheddar but it doesn't matter), 1 package of thawed frozen chopped spinach, 1 tsp garlic salt, 2 tbs worchestire sauce, 1/4 cup cream, 1/4 cup grated parm. You can also added grated fresh onion but I usually skip it if I'm not home since that's a pain to do at the office.

Pasta salad. It's usually requested, actually. But sometimes I do a nice big fruit salad if I don't want to cook.
