My parents have a VW Eurovan that we may borrow for a bit. Where do you put a RF convertible seat in a big van? It's got 2 captains chairs in the middle row, and a bench across the back. I don't know if it has LATCH but I doubt it. I'm thinking we should use the lap belt in the back?

Yeah I'd put it in the center of the bench seat with the lap belt.

I have a Mazda5 which has a van setup and van doors. I love using the captain's chairs in the middle because the access is so easy (and it's more protected from a rear crash). sometimes it will block off the back though depending how your van is setup.
our captain's chairs have LATCH and the back seat only has top tethers so you'd need to use the belt. you can also use a seat belt install in the captain's chairs, you're just supposed to keep them all the way back (basically so that once it's installed correctly you don't move the seat and mess it up - you also probably need them back for a RF seat to fit).
obviously your car might be different so check the manual (maybe you can look online?) which should recommend seat placement
