I usually serve it with baked sweet potatoes or a green vegetable.
Spaghetti Squash with a Ground Beef or Turkey Spaghetti Sauce is also good. For the sauce, you can just use 1 small sweet onion, a can of crushed tomatoes, 1 lb meat, fresh basil, salt/pepper, sliced fresh mushrooms, red pepper flakes, garlic, and a little olive oil. Trick with the squash is to cook it uncut in the oven at 400-425 degrees for one hour. Much easier to cut when it's cooked. Cutting it raw is very difficult.
Also, another thing I do is make a lot of curries. I just use any curry paste (depends on how spicy or mild you like it), a can of unsweetened coconut milk, shrimp or diced chicken, mushrooms, broccoli or sweet peas. So good and it makes good leftovers. That's tough with paleo!
Otherwise, we typically make a meat and one veggie side. I use a lot of spices to try to make it flavorful. Bone-in roast chicken is always a good, tasty choice. That's our everyday meal and it works for us in terms of maintaining our weight to allow us to still enjoying non-paleo foods on the weekends.
I've been eating paleo for a year and half and while I'm not super strict (probably 80/20), I've been really pleased with the diet. You can do it! Let me know if you have any questions.

@travelgirl1: You're so welcome! I hate to diet and have always struggled being slightly over my ideal weight. Two and a half years ago I gave up soft drinks and lost about 8 pounds. And then about a year and half ago I began doing crossfit and eating paleo. My husband lost 25 lbs and has kept it off! I lost about 3-4 lbs but went down an entire dress size in all my clothing and I look so much slimmer and more toned. I would really encourage you to cut the soft drinks if you drink them. I was only drinking diet ones and only maybe one a day, and getting rid of them made a huge difference for me.

@travelgirl1: I have the nom nom paleo app on my phone and use those recipes all the time! A lot of these are on the website too. We love cracklin chicken, which literally takes 15 mins to prep and cook) and garlic mashed cauliflower (although I'd recommend roasting the garlic before you blend - we love garlic but using that much garlic raw overpowers the cauliflower). Sorry I can't link, I'm typing with one hand while feeding LO2.

My other stand-bys are: ground turkey/zucchini/onion/mushrooms/paleo marinara sauce (Rao's) - don't even need zoodles, delicious on its own
And paleo crockpot chili (just google for any recipe).

This one is my favorite. It's so tasty! We find it makes lots, so we split it in two dishes and freeze one. It freezes really well too.

Something I always had trouble with was pales breakfasts. I'm typically a carbaholic in the morning and grew tired of an egg every morning. This recipe for the crockpot is great. I'm not sure if it's strict paleo (I can't remember all the rules) but there's no bread and it's delicious.

This one is really yummy! Even though it has a cup of hot sauce, I don't find it too spicy for the kids. I leave the eggs out and I top it with panko and cheese and once its cooked, sour cream ( all of which it non paleo hah)

I haven't actually tried this one, but I have all the stuff to make it. I think I would precook the meatballs a bit so I could drain some of the fat first.

Paleo got really easy for me when I gave up recipes. Our pattern is one meat + two veggies. Meat is grilled or roasted. Veggies are steamed or roasted. I don't spend more than 5-10 minutes prepping any meal. Eggs in the morning.
