I love books with beautiful or cute illustrations. Off the top of my head, I really liked Oliver by Birgitta Sif, Blue Chicken by Deborah Freedman and the illustrations of Tea for Ruby by the Duchess of York.

I love the illustrations in Giraffes Can't Dance, any Llama Llama book, and any Olivia book. The Day the Crayons Quit is great too.

Another vote for Miss Rumphius here! Barbara Cooney is the nec plus ultra of children's book illustrators in my book. The stories she chose to illustrate are generally really excellent, too (she wrote Miss Rumphius, but she was mostly an illustrator of other people's stories). Other illustrators I like are Trina Schart Hyman, Tasha Tudor, and Erin Stead (especially A Sick Day for Amos McGee). And I personally dig Dr. Seuss' illustrations and think they're a perfect complement to his stories, but I'm not sure I'd call them beautiful.
ETA: I forgot David Wiesner and Robert McCloskey! Both are excellent.

I love beautifully illustrated books, so I've been collecting quite a few: I Had A Favorite Dress, Gaston, Stuck, Lately Lily, Flora the Flamingo, "Julia, Child" by Kyo Maclear, and Uni the Unicorn. For board books, any of the BabyLit books or anything by Nancy Tillman.
