We're not religious and want to teach our kids about all religions. The holiday season is a good time I think because so many other religions also celebrate!
What are some of your favorite books about religious holidays that's not Christmas?

I'm not sure what age you're looking for, but I like The Return of the Light by Edwards. It has different winter solstice stories from around the the world.

My 4 year old is very interested in Hannukah and loves the Curious George book about Hannukah. I'm thinking about getting him a toy menorah because he is so obsessed.
