I've been looking into a class where immigrants teach you how to make their ethnic cuisine:

It's hard to pick just one cuisine though. If I had to pick fro all the ethnic cuisines in the world, I'd probably go with Thai (since it's the spiciest!).
If you could learn how to cook one ethnic cuisine, which would it be?

That's so cool, but so hard to choose. Thai so I could make it without peanuts for my son (although would it still be as good?), Indian so I could make it healthier, or Korean since it's so hard to find in my neighborhood?

Indian. I think I have a good grasp of most other familiar cuisines. But if I had a tandor and could make naan and butter chicken... I would make it every day.

Hands-down, Japanese. There are some amazing, subtle flavors I've tasted in so many Japanese dishes that I can't replicate! How do they do it???

Indonesian!
My husband is Indonesian and his family used to own a restaurant. His mother is in her 80s, doesn't cook anymore and doesn't really speak English.
I'd love to learn and be able to make J some meals similar to what DH had at home when he was small.

Malaysian because that's where I grew up and there are so many foods that I have no idea how to replicate. I found one Malaysian cooking show but a lot of it was "buy this sauce packet" and add it. And I'm like, how is that helping me?

Indian! I love Indian food, and I would like to be able to control the spice level and the ingredients used. Plus, it would be so convenient to make it at home.

I can't really decide...but probably something Asian. Thai or Vietnamese, maybe? Indian would be good, too. I love all three, but rarely go out to eat it (stupid picky spouse), so it would be fun to make at home!

Indian! Every one of my attempts has fallen so flat. I used to have an Indian roommate and I ate so well. DH would probably want me to learn Tibetan - he used to eat it so often in New York, but we can't get it in our current city!
