I have nonstick muffin tins and spray them with nonstick spray and just bake them directly in the tin. They pop right out.

I usually put spinach and cheese. Sometimes mushrooms, sometimes bacon or sausage.

I put bacon, onions, and bell peppers in them. I don't use liners, I just grease the tin.

I use a muffin top pan, spritzed lightly with some olive oil. It's the perfect size and the eggs slide out easily. I usually just sprinkle some salt and pepper on them, but I should try some of the other suggestions here!

Oh, also I've made them all sorts of ways. With sauteed mushrooms and bell peppers, or with salsa and sausage, spinach and cheese would be good too.

In them - most of the time whatever is in the fridge! Some combos we like are:
sausage/bell pepper/onion/jack cheese
bacon/zucchini/onion/parmesan
chicken/broccoli/cheddar
mushroom/cheese
sun-dried tomato/pesto/goat cheese
ham/asparagus/cheese
I also just use a non-stick mini muffin pan (or regular size), spray with non-stick spray and bake. They may stick a little but running a knife or spoon around the edge will help them pop out. I also don't leave them in the pan to cool, take them out after just a couple minutes and it will keep them from sticking more.

I just use a non stick pan sprayed with Pam.
I usually put whatever veggies we have in the fridge....broccoli, onions, asparagus, etc. And some kind of cheese. You can't really go wrong! It's such an easy breakfast to grab and go.

I would make sure you really spray the pan well. I didn't and it stuck so bad I had to throw the tin out!

@hellobeeboston: My husband made a batch with turkey sausage, red pepper, green onions, and cheddar cheese over the weekend and I've had them for breakfast all week! SO good!

@LindsayInNY: Here's the recipe I used. I think a blogger posted about them here too! I microwave them for like 20-30 seconds for two of them. They taste like tiny omelets

@grizz: DH and I aren't big veggie people... I think I could do sausage/cheese and bacon/cheese though!!

I've actually found it easier and better just to bake it all in a 9x13 pan and then cut it into pieces. I scramble 12 eggs with a little milk (if I have it) and then any other meat, cheese, and veg i want. Throw it in a greased 9x13 and bake for about 35 or so minutes. I cut and reheat in the toaster oven. I actually like the texture better this way rather than using a muffin tin.

@MUI831: I agree about the texture of the pan. I like it much better.
Also I find cooked veggies work better than raw since raw release a lot of water when baked.
