If you made LO's first birthday cake, what recipe/kind of cake did you do? I'm thinking of doing an apple spice cake (recipe from smitten kitchen) but am looking for other kid friendly ideas! I don't think I want to do anything super chocolate-y....

I think any kind of "bread" is good, like banana bread or even the whole wheat apple muffins from Smitten Kitchen.
The only thing that would trip me up is the amount of batter and the size of the pan (if you want to do round layers?).

@looch: oh the recipe she has for that cake is for like 50 people (!). I only need it to feed 10 adults and like 5 kids, so I would be like quartering it!

I did an apple cake with tons of diced apples in it and adjusted the recipe to use half whole wheat flour. I baked it in big rectangular pan (9x14?) and frosted it in white icing. My LO loved it and so did the rest of the guests. And the large white surface was perfect for decorating. He's three and a half now and I've made the same cake for every birthday. (Truth be told, I don't usually bake cakes, so since it works so well, I just stick with what I know!) Decorated with owls for 1st birthday, cars for 2nd, and James the red train from Thomas the Tank Engine for the 3rd.

@oscarthegoon: thanks for sharing! I like the idea of having a large blank surface to decorate (I think I want to do the outline of a 1 in sprinkles!)

DD has an egg, dairy, and gluten allergy, so it was tough! But I found this recipe and it tasted pretty good. I tried both, but ended up making the lemon cake for her birthday.

I think I'm going to do a pumpkin cake and pumpkin cupcakes along with vanilla cupcakes. Not sure if I want DS's cake to be pumpkin or vanilla or maybe both (one layer of each).
