@HLK208: I've been making chicken tenders for lunches and they're really good. I lightly bread them with almond flour and various seasonings and bake. I've been eating a lot of steamed veggies too. I'm planning on doing some more grocery shopping this weekend and trying out recipes from @Blackbird next week! Check out her post to my wall they look yummy!

@Running Elley: so helpful do you make your own almond flour?

Does anyone want to share what their day-to-day eating looks like?

    Here is mine thus far:
-2 scrambled eggs (teaspoon of olive oil)
    -small peach
    -1/4 cashews
    -a serving of carrot sticks
-green smoothie (canned coconut milk, banana, 2 cups baby spinach, kale and chard, 3/4 cup berries and 1/4 cup pineapple) SO good and the coconut milk makes it thick and creamy
-balsamic chicken and brocoli for dinner

I need more calories though so I might have pistachios and some type of veggie for a snack.

@HLK208: Yummy!!! I actually buy my almond flour in bulk online from Honeyville farms.

-Turkey sausage, a scrambled egg and apple slices
    -Baby carrots
    -Almonds and raisins
    -Banana with almond butter
-Grilled chicken with steamed broccoli and steamed squash

And for dinner we're having grilled tri-tip, salad and fruit.

I started this morning. Had an omelette with peppers and tomatoes for breakfast, steak salad is the plan for lunch and then roasted chicken with tomato salad and sauteed kale for dinner.

I'm probably going to do primal as opposed to full paleo because I need to have a splash of milk in my coffee and a dash of cheese in my eggs.

@plantains: Sounds like a delicious day all around! I'm so glad that you're jumping on board

Today's Menu: Green smoothie for breakfast (spinach, peach, mango, strawberries and a little almond milk), snack of baby carrots plus a banana with almond butter, leftovers for lunch (chicken kebobs- chicken, red bell pepper, pineapple and red potatoes), no clue what my afternoon snack will be and baked tilapia, steamed broccoli and baked sweet potato fries.

@Running Elley: I've never actually thought to try peach in my green smoothies. I should give it a try!

    How is everyone doing?

I'm on day 3. Only 27 more days till I can have wine hahaha.

Breakfast - Egg Muffins ala Mrs Bee

Lunch - tomato salad, roasted chicken and a green salad in the side

Dinner - Fish tacos served on cauliflower tortillas

I have never made cauliflower tortillas so this should be an interesting experiment.

I feel pretty decent at the moment, but of course the torture of not weighing in is killing me. I don't know that I can go 30 days. I might cave a weigh in once a week on Fridays only.

@plantains: Report back on how the cauliflower tortillas come out! I've been wanting to try them but I'm chicken lol.

Today I had a banana with almond butter for breakfast, ill have some carrots and grapes as a snack, grilled chicken for lunch with squash and sausage, red potatoes and broccoli for dinner!

It's been going really well for me! I've been having trouble not weighing too. I had an OB appt this morning though and he weighed me. I've lost 4 pounds since last week! I seriously think my body hates gluten. Whenever I stop eating it I drop weight fast.

@Running Elley: @blackbird: you lost 4 pounds in your second trimester?! Holy cow, that is amazing.

zomg, the cauliflower tortillas were bloody fantastic! A ittle bit of work, but I loooved them and DH did too. I'm going to get a pork shoulder and make slow cooker pulled pork just so I can keep making cauliflower tortillas!

Day 4 and I totally forgot my lunch at home so I am eating deli buffet food. It is definitely paleo in spirit but I have no way of tellibng what dressings etc they used. Annoying.

Breakfast - egg muffins with spinach, onions, tomatoes and chicken sausage.

Lunch - roasetd veggies, salad, grilled chicken and steak

Dinner - Baked cauliflower with broccoli and pork chops.

Okay... I am having a really hard time not giving up. I have been doing this for 4 days now and I have never felt so tired since the beginning of my last pregnancy. Is that normal? Besides the fact that I broke down and weighed myself this morning and I have gained 4 lbs what am I doing wrong? For breakfast I have been eating eggs and fruit. For lunch I have been eating grilled salmon or chicken and veggies of sorts and for dinner I have had grilled chicken and veggies and fruit, baked chicken sweet potatoes and veggies and I have been drinking nothing but water this whole time!

@cyndistar3 Don't give up! Depending on what you were eating before, your body is probably going through withdrawal from certain foods. That is what is making you feel like crap. When I went mostly paleo, the same thing happened to me. But within a week or so, you should start to feel great. Lighter, more energy, and definitely losing weight. (But, remember, there is no scale during whole30 for a reason.
