A friend had her baby over the weekend, and I'm signed up to take her a meal in the next two weeks. They are not strictly vegetarian or vegan, but I know that is more their preference for health reasons. I'm at a loss as to what to bring her. I'm looking for a meal that is vegetarian, preferably low or no dairy, and not pasta. Everyone else has signed up to bring her a pasta dish! Any ideas? I'm stumped!
